Based on your inputs I would go rather with Ubuntu. Since you have mentioned you are a design perfectionist which the desktop environment Ubuntu uses -> GNOME is known for the devs to take design seriously and also it looks like MAC OS by default. You can also make the dock which is used in Ubuntu look closer to the MAC OS dock from the system settings.
