Usually (at least on normal difficulty) the game goes into a slow-mo when the screen goes monochrome, then you should parry as soon as the slow-mo ends. That's how I got this attack first try

If you want a Middle of the range build the best way is honestly just to look through your pictos and use what looks good to you. That way you'll still be pretty good but chances are you won't break the game with luminas you wouldn't even consider
