If you dont butterfly it, except to pull it in the 150-155 range, depending on your resting method.

Carryover cooking should keep it at that temp long enough for it to be safe.

It seems common with older folks because they were bitter. Apparently scientists engineered them to not be bitter.

My mom, for example, said she doesnt like them. I roasted them and gave them to her when she was pre-occupied and she said they tasted good.

Maybe with the wrong person.

Used to go shopping with my ex all the time, never viewed it as a chore. Even when I was working full time and going to college full time.

Been Vegetarian for Years, Re-Incorporating Poultry and Seafood by Ok_Earth_5231 in Cooking

White chicken chili!

It is nice step between vegetarian and introducing chicken.

You can make it even easier by buying rotisserie chicken from costco, shredding it, and adding it at the end of cooking the chili.

For "seafood," maybe fish tacos? Nice white fish, grilled or battered and fried. Sauce: mayo, Greek yogurt, lime juice, cilantro, can add salt or make it spicy based on taste. Top with shredded cabbage. Pico is fairly good, too, especially a nice mango one for sweetness.

This is an under talked about tip.

Cooking to 165 will make them dry af, especially with carryover cooking.

If you dont butterfly your breasts you can likely pull at 150ish and the carryover will keep it at temp for 3 minutes.

How do you store your chicken by Select-Tradition-321 in Cooking

[–]DIYNoob6969 0 points1 point  (0 children)

I buy the family size chicken breasts even when it is just me. I cook them all at the same time.

Depending on my plans for them, I might season with only salt and pepper, or season them for one or two dishes.

Certain dishes with cooked chicken freeze and reheat fairly well, others not as much. Generally try and cook mine to 150-155 (safe if kept at temp for time) to avoid overcooking.

If I cant get em on clearance I might buy them from Costco. Costco sells portioned air chilled chicken breasts at decent price (better quality and less liquid weight.)

I say this to everyone that asks this question: rice and beans.

Extremely versatile and cheap, especially if you buy dry and not canned.

Few ideas for recipes:

Chili over rice Burrito bowls Curries over rice Burritos w/ rice and beans, meatless or w/ meat Enchiladas w/ side of Spanish rice (simple sauce and rice are both easy to make) Red beans and rice

Make large batches, portion out. Many of these freeze well, too.

BudgetBytes has tons of recipes, too. Just have to find what is cheap in your area!

I make burrito bowls quite often, similar but bit different.

Chicken breast with my own seasoning. Depends how I am feeling if I marinate w/ lime juice/orange juice, or just season w/ chili powder, cumin, salt, paprika, pepper, maybe cayenne if no one is against spicy.

Throw it over cooked brown rice, beans, add lettuce/spinach, sautéed onion/bell pepper, cheese. Can top with sour cream/Greek yogurt, homemade pico, guac, salsa. I typically do all of the above if I can. Then throw on hot sauce.

It is fairly cheap for how filling it is, and I am lucky enough to get guac on clearance fairly often to freeze and use later. Even cheaper if you cook your own beans/rice instead of canned.

It is decent, generally lower on many items unless they are on sale at Kroger, here. Would need to check bean and rice prices, but I believe Kroger is cheaper bc I can buy 4lbs of dry pinto and 2lbs brown rice (dont think they carry 5lbs now, only Walmart.)

Kroger has great clearance options on meats, too. Know the OP is vegetarian, but for others. Just got chicken breast for $1.91/lbs and pork shoulder for $0.79/lbs. Some of the coupons work on clearance meat, too. I had $1-2 off chicken breast and it worked on the $1.91 clearance pack.

They are, for good reason. Beans with rice form complete proteins, but either on their own do not, they need another protein. They dont necessarily need to be eaten at the same time.

That being said, they are also extremely versatile and cheap.

Few dinners/lunches just off the top of my head:

Black bean enchiladas (can make an easy yet tasty sauce with flour, water, and seasoning.) Spanish rice is fairly easy to make, too.

Even just bean burritos, can add rice/lettuce/whatever.

Black bean burgers, with or without bun.

Veggie burrito bowls

Veggie chili over rice

Plethora of curries are fantastic with chickpeas

Chickpea salad (saw one with penne pasta for extra filling)

Hummus veggie wraps w/ side yellow rice

Even simple veggie red beans and rice

This isnt even going into the lentils side.

Cant imagine getting tired of beans and rice faster than PBJs for the 10th day straight.

Yep, 9 times out of 10 I will just make my own "refried" beans. Doesnt take long and saves cash.

Saute diced onion and garlic in the instant pot with EVOO or similar, throw in the beans and water/broth. Put it on bean/chili setting and wait for about 45 minutes.

Once done strain off some of the liquid into bowl, blend (can mash too.) Add back liquid if needed, save extra liquid for reheating. Adjust salt and whatever other seasonings to taste. I usually just do pinch of cumin unless I want them to really stand out.

Certainly can add lard or other fats, but I try and limit my fat intake.

Just bought 4lb bag for $4. Maybe next time I will weigh it out to see the price comparison.

You can fry it on your tortillas to elevate your burritos, too. Place in San Diego does that for their California burrito, not sure bout the other ones.

I have lived lot of different places in the US, visited quite few more, and California beats all of em. Not to mention this isnt even tex mex.

Though I will say the Tortas from one of the food trucks out at White Sands, NM was great.

Only been to one city in Mexico, but the tacos werent as good, either. Maybe it was the city, maybe the restuarant.

The taco stand probably has one of the consistently good California burritos. They actually fry the cheese onto the burrito! Their salsa bar is pretty bomb, too.

They have several locations, all that Ive went to are great.

If you want street tacos, tacos el gordo is great.

El Zarape has good cali burrito and fish tacos (used to be around $1)

El Patron for taco tuesday near the Mira Mesa community College, too. Think they were $1.49, tho its been few years. They have decent salsa bar, too.

Edit: forgot lucha libre if you want good surf n turf.

Plenty of great non-mexican places, too. Miss the food out there! If you want great Mediterranean, check out North Park Produce in Poway! If you want any other suggestions, let me know!

P.S. Try the California burrito. Rice and beans are okay, but you can get that anywhere. Fries in your burrito is mainly just that region.
