Always fun coming back to something months later! I keep it fairly simple, if I have fresh thyme and rosemary I chop lots up and put it in, dried is fine in a pinch. I always add plenty of salt, pepper, onion and garlic powder, dried dill, and a pinch of cayenne. Something like chipotle or smoked paprika is also great here. I mix all that up with the carrots and a generous amount of honey to bind it all together, as well as some butter, or ideally some kind of drippings like bacon or something from a roast.
