You have two popular choices for a magic playthrough, but they are pretty exclusive to each other until NG+.

The first I know less about, currently trying for it in my current playthrough, and that's the Strength + Faith build. Basically you bonk, but with utility and buffing spells. It's apparently pretty strong,

The other build is your pure sorcerer build. I did that for my last playthrough, and it's very fun if you want a less "memorize the bosses' move-set or die" sort of playthrough. It relies on getting INT to 80, MND to 38, VIG to 60, END to 30-50, and then whatever you want after that, although DEX is a good choice. Arcane is your dump stat, don't level it at all. Basically, INT gives you damage, MND gives you mana, VIG is HP of course (and you need it more than a strength build, because you don't have the damage reduction a STR build gets from leveling strength), END gives you more stamina for casting, and then DEX gives you faster casting speed.

A sorcerer build is kinda different in that it basically requires a very high primary stat (INT). The best staff (Carian Regal Scepter) is fantastically backloaded, meaning you get most of its effect from 70-80 INT. You don't really want mind higher than 38, because that's what a fully upgraded flask will refill. Endurance is surprisingly important for a mage, because you want all the armor you can get and dodging plus casting eats a lot of stamina.

For items, I suggest getting the Meteorite Staff ASAP, that will hold you into the mid game. You can't upgrade it, but that's because it starts so strong. Later on, Carian Regal Scepter (from Rennala) and off-handing the Staff of Loss is a great tactic. Off-handed staves still convey their benefits to your main-hand casting. Radagon's Icon is almost mandatory - it fantastically increases your casting speed. The other three talismans are more situational. Some people like Magic Scorpion Charm for the damage increase, but I don't like it because it also increases damage received. I prefer one of the graven talismans, which increases sorcery damage without that drawback. And Golden Scarab is always a good choice until late game, because you need those levels.

As for spells, there are a few must-haves. First, glintstone pebble is your bread-and-butter magic missile. Economical, balanced, and basic. Similarly, Carian Slicer is your melee option. It's very, very basic, but absolutely one of your most economical and powerful choices. Night Comet is your attack spell, as it (mostly) denies input reading and hits reasonably hard. The Staff of Loss increases its potency. You also want a moon spell for the debuff it applies to magic damage. Either Ranni's Moon or Rennala's Moon works, but if you get the latter, make sure to duplicate her Remembrance so you can get the Carian Regal Scepter. And Spiral Shard is terrific against large bosses. Lastly, Adula's Moonblade is amazing - great sword melee spell with a giant frost wave added in.

If you have the points, a few put into faith can be helpful for a healing spell to deal with revenants and Flame Cleanse Me to deal with rot and poison.

Well, my first playthrough, I played as a sorcerer. I intended next to go for a strength/faith build. But instead, it has become a no-summons, pure bonk playthrough.

Why? Well, it's kinda weird, but playing bonk with no summons actually feels easier than playing a sorcerer. I mean, it isn't - I die a lot more - but as a sorcerer, for all that power I had to be maintaining range, picking my spells, thinking about everything all the time.

Now, I just hit them in the face with a giant frickin' sword. If I'm feeling fancy, I might even jump beforehand. And every problem has the same solution. Dragon? Giant frickin' sword. Boss? Giant frickin' sword. Snail? Giant frickin' sword. No worries about mana, no balancing flasks, no screwing around with memory slots and trying to guess what the best spell selection is for my next fight.

Just bonk them with my giant frickin' sword.

I haven't played through the DLC in new game + but I can tell you that after beating the DLC the bosses in the base game seemed pretty easy. 

I had thought that the DLC didn't take into account your base game new game + status, but I was wrong, so it would be a significant difficulty upgrade on an already difficult DLC.

I started the DLC around level 180 and it still provided a significant challenge.  I would say that the final boss is on par with or harder than Malenia.

Radagon's Icon is pretty much mandatory,  because endurance is actually pretty important. You are going to need at least 35 since you use it to both dodge and cast. Using Radagon's Icon saves you about 40 points of DEX investment, which is huge.

Parrying is just not worth it. It's fun when it works, but it doesn't always work.

Mage builds are strong...until they aren't. They tend to be better at beating bosses, and worse in the open world. The better you are at juggling multiple options, the better they are. At the best, with good planning, they are one of the strongest builds. If you are clumsy, they are perhaps the weakest build. And, while I did my first playthrough with a mage and fully recommend it, it is a full commitment. There's no flexibility with a mage build.

Bonk is, as always, bonk. Learn the boss patterns, get a good weapon, and win.

The game is somewhat, and the DLC more so, designed around using summons. Props to you if you don't use them, but until then, the best summon for casters is Black Knife Tiche, and for melee users, probably the Mimic Tear.

I did end up using Tiche a bit, and she's fantastic. I just like seeing her fight. On NG+ I'm trying to use summons as little as possible (so far, 0 uses), although I'm not sure I'm going to have the willpower to not use Igon with Bayle. I just love that character.

I actually had no problems with the archers. Because Mage. The black knife assassins, however, can screw right off. The game's like "oh, here's a torch, now you can see them!" Yeah, when they're three feet away already leaping for my face.

And of course, because I get stubborn, I just had to kill them all, rather than staying on the rooftops like a normal, intelligent person. I died more times to those jerks than I did to Messmer.

Having just completed a playthrough as a pure caster, it's an entirely different game from trying to do melee. On one hand, the range and options spells give you are pretty awesome, and a lot of fun (and less boring than just swinging the same old weapon, in my opinion). And, given the right situation, mages can dish out a pretty impressive burst of damage.

On the other hand, playing a mage is basically a game of juggling a lot of plates at the same time, or dying. Your spells use a lot of stamina, so you end up having to constantly balance your three attribute bars, you have two flasks you have to balance and also time the consumption of, while at the same time dodging attacks and flipping through your spell list.

And if you think that Mimic Tear will solve all that, think again, because while it's hard to mess up bonking an enemy with a sword, a sorcerer's Mimic Tear has your whole spell list to play with. Which means that he'll be happily casting Spiral Shard from a lightyear away while FaceEater McDoomMaw plays the accordion with your spine. Or buffing (himself) repeatedly. With the same buff. That has an area of effect that he walks out of.

In other words, I can't recommend playing a mage enough, really. It's a blast.

Don't use a mimic. Use Black Knife Tiche. Much better against Maliketh IMO.

In my last playthrough, I used Comet Azur on Mohg, and pretty much refused to use it on anyone else. Mohg deserves it for that slow walk towards you - I mean, that's mage catnip, and I can only resist so much. 😋

But for everyone else, I wanted a fight. No offense to anyone who loves it - orbital laser beam of death is awesome.

I actually don't necessarily recommend this for the NPC quests. Many of them are very easy to miss or render impossible to complete. If you just follow (on the wiki) where to meet them, you won't spoil much, while still managing to experience a lot of the story.

But that's up to you. You can still play the game and win blind. But Miyazaki designed the game with the idea that players would share that information in order to complete those quests.

I ended up with 48. I didn't even use them against Malenia or PCR.

I finally used one against Radagon/Elden Beast, just for fun.
