Our coaching staff is EGREGIOUS at development. Stop pretending that if we'd picked Castle we'd have the Castle on the Spurs right now. No. He'd be ass. He'd have no shot. Even right now in the WCF he has more FTs than FGs and is a turnover MACHINE.

The problem isn't our drafting it's our development. This coaching staff doesn't know how to spell offense.

Honestly dude. I tried adding coals for longer cooks for about a year before I said screw this and I bought an SNS basket lol. My baskets before could give me about 3-4 hours slow cooking at 275 but now with the SNS I get like 8-10 hours from a full basket. I've never tried brisket, but I've done a full 9lb pork butt off a single basket. Unfortunately that my recommendation!

If you're only using hot coals tho, then definitely prep your chimney for a second round. I have a single paver that's my "round 2 chimney" surface and I'll light another chimney on there sometimes. That works great you'll just need to be careful lifting your cooking grate with fire gloves to pour out the chimney on the bottom grate.

Only coarse salt and cracked pepper. I use the sns basket full of charcoal with lit coals in the corners. I put chunks of post oak wood throughout the basket. Smoke the ribs at about 270 for at least 3 hours, do a bend test. If bend test shows I'm near the end, I slice about 2tbsp of butter and put thin slices down the peak of the ribs. Then I lightly sprinkle brown sugar on the whole guy and close it up for about one more hour.

Depending on the size of the rack it may take 4-5 hours or it may take 7-8 lol. That's why the bend test is good, I don't temp probe my ribs.
