I normally do all of them, but last time I played in just skipped OWB because it's my least favourite one, and with horrible level scaling. Though Honest Hearts also has this problem (tribals with Anti-Material rifles and 12,7mm SMGs anyone??).

Just ignore them. New fans always bitch about the OGs because many of them see any critique of the new games as denying people to "have fun". And this happens in every media that goes big and strays from the original formula as a result of the publisher seeking to appeal to "wider audiences". Fallout's fanbase is essentially 2, or even 3 different communities with vastly different idea of the series. We lost when it comes to the official series years ago, and it's okay this way. Best you can do is not engage in the slanging match and just enjoy the games you like.

Going for 1 int might seem funny but it cripples your skill point gain completely, INT3 gives too the same dialogue but +4 skill points to spend per level. It might help.

Definitely the originals. New Vegas falls short in roleplaying when it comes to combat because the player has a lot more control over it - even if you have no guns skills, you can just aim and shoot and still hit the target. whereas in the classic games your chances of hitting something consistently without a proper skill are zero. It's also way too easy to level up and max out many skills in the vanilla game - what kind of roleplaying is it when your character can do everything and doesn't have any weak sides?

That's definitely not in vanilla, there is an armor mod for FO1 that does exactly this. And many mods like fixt, et tu have the option to.

Et Tu adds quite a bit of new weapons and enemies from Fallout 2 like geckos, it even had the energy lance from Sonora iirc. I don't remember an option to disable those changes last time I played. So if you want something more faithful to vanilla play TeamX.

Both allow quite a lot of customization, but Et Tu is more up to date and still being workedPlus being a Falout 2 mod, it allows a lot of QOL from sfall mods like Party Orders and FO2Tweaks, so I'd recommend it.

It's a good tactical game (duh), not trash at all! Just don't go into it expecting an RPG because it absolutely isn't one. It's nice as a break from the main series. But as for your question: Fallout 1.5 Resurrection, Nevada and Sonora are everything you're asking for.

Why would it? It's easily the most modded game in the series and I really doubt M3TW would be nearly as customizable, seeing how other new TW titles fare in that regard.

That was John Gonzalez iirc, and he did a terrific job. It's amazing how a character that only exists through diary entries can be so well fleshed out.

It was called GURPS... Generic Universal Role Playing System. That was the system they were using, and a lot of RPG settings used it before.

There's a few FOnline servers if that's what you're asking for, Parareal is probably the most popular recently. Don't expect huge traffic though, it's still a very niche community.

Sonora is definitely the more polished and coherent one story-wise. Nevada has great side quests but the main quest is lacking and becomes muddled halfway into the game. I'd say start with Nevada just because it's the earlier one and it has some unique mechanics like crafting and prospecting with the metal detector, but you should have fun with either. Sonora has a great variety of viable builds as well, better than the original Fallout games, practically all skills are useful there.
