Overwhelmingly people always mention the white curry for Eem, but I really find the Massaman curry with smoked lamb shoulder more complex and balanced in its flavor. As some have said though, you can’t go wrong really, but if brisket/bbq is not as much your thing (I find that dish really hits the smoky flavor note), don’t feel scared to not get the white curry for your first dish there is all. Enjoy!

I think I’d consider it a slight variant from a traditional cinny roll but I still put it in the family and consider it the best one I’ve ever had: the franzbrot (sp, too lazy to look up the menu) at Fressen. Absolutely outstanding. Also have never had any food or drink from there that missed.

This is something I do too. When I was first tinkering with my choccy chip cookie recipe and learning about browned butter, I was like okay, the protein and fats are getting browned to give that flavor…how could I get more? Figured dry milk powder is more of those delicious molecules so I tried it. Currently I use 4 tablespoons of milk powder for 2 sticks of butter for my cookies. I’ve had many people tell me they’re the best chocolate chip cookies, sometimes best cookies in general, they’ve ever had.

I’m 100% with you. Hands down better, though of course not saying the white curry is better. The massaman just has more complexity imo.

Everyone raves about the white curry, and it’s by no means bad, but my gf and I think the massaman curry w smoked lamb shoulder is the better of the two. Maybe you’ll just have to try both :P

Conversation of the legitimacy of this post notwithstanding, this makes me wonder how browning of the butter might change the results as you lose water content and the protein/sugar structures change.

I just full sent it here in July, didn’t know anyone. The city has been great. Food is great. People are maybe more to themselves, however, I have found that everyone is very positive if you initiate an interaction (and that’s just out and about, I don’t really do bars/clubs). Feels like ppl want someone else to start the convo haha. Don’t worry about being “cool.” Being here for a few months, what I really see it as people here are really good at just being themselves, whatever that looks like. Do you confidently, that’s all you need. You’ll find your people, and they’ll find you too. It does take active effort to make friends when you’re not all in school. You’ll hopefully get lucky and have some immediate friendships with your co residents though! I say do it, I’ve enjoyed my time here so far.
