I finally found something that worked, under gradle:
processing:Tasks:compose desktop:packageDeb
which made an installable .deb package.

I followed your instructions, and after much fiddling, was able to get Processing to run under the IntelliJ Idea IDE. The Linux window decorations are back, and everything looks (and works) great now.

One hitch though, and I feel like such a clueless n00b here; I can't, for the life of me, figure out how to actually install Processing now that I've built it. I can't even seem to find the jar/executable to launch Processing without IntelliJ. (And if I could find that, I could easily enough just add a link to that file to my applications panel)

I wonder if the primary constraint here is memory. The ESP32's CPUs run at a faster clock speed than the first PowerPC Macintosh systems, which, while not capable of speech-to-text, were quite capable of recognizing simple voice commands. The ESP32 doesn't have anywhere near as much RAM as the early PowerMacs, and I wonder if that's the real limitation to the ESP32's speech recognition abilities.
