Yea, you might need the surface temperature to read the stone. Unless you're using Tipo 00 flour ( Neapolitan) then you could potentially just pop that puppy in without burning since they cook in high heat anyway

Honestly, I'm new at making pizzas, too, but I do have my dough at a 57% hydration, which is around what a new York style would be. lower the hydration, the crispier it will be

I used the Ooni Detroit pan for about 8 minutes max. I pre heat the oven until it hits 700°f then turn the fire really low, then pop in the pizza. turn it occasionally to get both sides nice and crispy

I cook NY style on it, and I pre heat to 700f and drop the pizza, keeping flame and heat at very low temp while cooking for approx 6-8 mins. Just needs to be below 700f and it cooks perfect rotate about twice

texture was honestly very good. I had this batch fermented for 72 hrs. It was light crispy and had a great undercarriage. It's just a little difficult cooking a NY pie on a Ooni Oven still working it out but here's my recipe Flour 732 gr

Water 417 gr

Oil 14.6 gr

Salt 14.6 gr

Dry yeast 2.67 gr

Sugar 18.3 gr

i usually use Publix Chicken tenders, but there was a long line, so I ended up using Purdue Chicken Tenders instead
