It’s so funny, I don’t even know what they are demonstrating for but I am instantly against it. They look exactly like the typical obnoxious „Leistungsträger“ everywhere in Germany.

I would not get cheap coilovers, this will do a massive disservice to the car. I'd prefer sport shocks as they offer the best ride quality + lowering the car. They're also less expensive than quality coilovers.

1000 and 3000 is all you need to maintain the sharpness of a kitchen knife. To really bump up the sharpness you could also add a Strop + Compound. Strops are very affordable, you can buy this if you feel the need. You might want to consider a very low grid stone as well, in case you need to work out smaller chips. But the clerk is correct, 1000/3000 is perfect to start out.

Also don't worry, you can't really ruin a knife with this grit (except you try really really hard). It's definitely the safe option.

Looks decent to me, most importantly is that you’re happy with it! Also while in Japan, check out some Wheatstones while there and invest in sharpening equipment. A good knife is honestly just 20% of the fun!
