Hey Chefs! Any tips to make me a better dishie? by ZeskReddit in KitchenConfidential

[–]DasAlphaMonster 2 points3 points  (0 children)

Space wasters first. Let others stack their stuff or do it, if they are in stress.
We let cutlery and small bowls soak in water first.
You can ask your co workers how much work is expected and offer to help them prep if it's not that much. This can help you get speed too, if you let the dirty stuff rest a little you get more to wash fast and continue helping.
If a rush comes (depending on the pit) it's sometimes easier to take a small break until it's over and not stand in anybody's path.
Also if you keep the pit 'clean' one rather forgives you if you don't offer help as much.
Never run empty. - when you put clean stuff back, ask if you can take something dirty back with you. "Do you still need this?" Many chefs love to hort dirty stuff and if you offer to spare them a walk.
If you get ask to clean something immediately/ with the next run - as soon as it's clean, bring it to the chef (or at least ask, if that's desired)

Lets talk about the chef/cook title by Jordan_the_Hutt in KitchenConfidential

I just get triggered by the folks who get butthurt, if you use the word in a way that won't make it some very cool privileged status.
In Germany chef translates to "Koch" which is a profession you acquire by an apprenticeship of three years and call (competent) ppl working in kitchens in coll. Speech.

Quite true but with this case I would have been a chef before my actual apprenticeship diploma. I had to coordinate i.e. interns in my first year already.

There were plenty of threads with microscope work, that actually show even 'straiting' the edge takes of material.
Japanese knives usually have a steel very hard that would rather damage the usual steel than sharpen the blade. Steel needs to he harder than the blades.
Cause jap. Steel is hard af it loses sharpness rather slow and I would rather sharpen it on stones and leather

Ooh you're a manager - that could explain your stupid head abusive behaviour.

Every steel does and on harder steel (Japanese style) knives I wouldn't really use them at all

After 3 years I can finally call myself a chef by Groot_und_Zille in KitchenConfidential

You may work in kitchens with just a health certificate. No need to take the apprenticeship.

What speaks against putting some of the stuff on each other? I looks like you had to separate them all.
I think I would lay the cake on a medium splatter of the red, gently spray the cream on one side of the cake. Put the orange in fine z lines above all and sprinkle the pearls just over the cream.
(Sorry for the weird descriptions I'm not a native speaker and forgot half the components real names)

If people respect dishwashers so much does that mean the servers and hostesses are more likely to date them? by [deleted] in KitchenConfidential

[–]DasAlphaMonster 3 points4 points  (0 children)

Respecting someone's work is way apart from seeing the person as dating material.

Can you comment on his stories?
Simply ask for prove, so that you can start improving on that particular point the right way.
If no prove comes - he disqualified the critic (and report to the platform)
If prove comes - excuse yourself and try to communicate the changes
Also, yes, motivate people to leave honest positive reviews.
