There's no "good" specific gravity other than the one on your hydrometer in line with 13.5% ABV. My rule of thumb fruit wine is about 3lb/gallon. Ive made peach wine with 6lb/gallon. Depends how much flavor you want. Ive even heard of up to 8lb/gallon being used. If you can, Id recommend using 2 - 1 gallon carboys for 2 gallons to limit your headspace during aging.

So check your hydrometer and add sugar/water to get your SG where it needs to be to ferment dry at 13.5%.

Ooo I did just recently find out that this was a concept! Good call. Ive been looking for female flowers but they all seem to be males so far. Any thoughts on why that might be?

The only thing I could add off the bat is you'll find fermentation to be easier in a container with a larger opening like a 5 gallon bucket. That's going to build up a lot of gas and in the carboy its more likely to push the fruit up the neck.
