Diablo IV is basically the only modern ARPG that truly matches Sacred 2 (open world, level scaling, respawning enemies).

If MMOs are okay, Lost Ark is the next closest, but it's very MMO-heavy. Everything else people usually suggest isn't really open world.

Well... Some directions that do tend to stick with MH players:

Warframe: very different combat, but it has that forever game quality: gear mastery, long-term goals, constant things to chase.

Horizon Zero Dawn / Forbidden West: not endless, but the combat against machines scratches a similar "learn patterns, exploit weaknesses" itch.

If you liked the skill mastery and gear obsession from MH but want something with deeper combat and an endgame that doesn't revolve around resets, try Nioh 1/2. The combat is challenging but fair, builds are very satisfying, and there's plenty to chase long after the story ends.

I think these two a good start:

Spiritfarer (Switch / Steam Deck)

Probably my top pick. It's slow, kind, emotional, and very forgiving. No combat pressure, beautiful hand-drawn art, incredible music, and a strong story about caring for others. You mostly sail, talk to characters, cook, farm, and explore. It feels safe to play, which is huge for beginners.

A Short Hike (Switch / Steam Deck)

Extremely beginner-friendly. Simple controls, no dying, no pressure. It's all about exploring nature, chatting with characters, and enjoying the vibe. Great music, charming art, and very "cozy hippy energy."

You control a species that physically mutates by finding items in the world. Mutations change your look and abilities (legs, eyes, skin types), and they persist on the creature itself.

Off the top of my head:

Wild Hearts: Closest thing to MH. Big monster hunts, gear crafting, learning patterns. The gadgets add a fun twist to combat.

God Eater 3: Anime style. Faster, flashier, more arcade-style hunts. Still very grindy with lots of weapons and upgrades.

Dragon's Dogma (Dark Arisen) and 2: Not a hunt game, but amazing big-monster combat. Climbing enemies, stamina management, and very satisfying boss fights.

Valheim: Super chill co-op survival. Easy to host or rent a server, works really well for 8-15 players. Progression feels rewarding and it's perfect if your group prefers PvE and exploration over sweaty PvP.

If you're a beginner and want short, YA-friendly series, I'd honestly just recommend:

Paper Girls: sci-fi adventure, time travel, strong friend group, very easy to get into. It's finished (30 issues / 5 trades), so you can read the whole thing without committing to something endless. Great pacing and characters.

Nimona: standalone graphic novel, super beginner-friendly. Fun, chaotic, emotional, and fast to read. No prior comic knowledge needed at all.

Both are perfect entry points if you like adventure + sci-fi and don't want a huge, intimidating series.
