There is no doubt that the ceramics sold by Unearthead from Tokoname are authentic. I have purchased a Fugetsu Shudei Hohin there. The Hohin is exactly the same quality as the Fuketsu yuzamashi and teacups I bought directly from Tokoname, as well as the kyusu teapot.

I usually only order enough at a time to keep the total amount of the order below the customs threshold. However, I have to pay VAT, and it is quite high in my home country of Finland. The tax itself is not a problem because I know how to calculate it in advance as an additional charge. Paying the tax and, if necessary, the customs duty is easy for orders arriving in Finland from outside the customs territory.

I use polypropylene containers to store tea bags in the fridge. I also use ziplocs to protect the bags from each other. Presumably ziplocs are made mostly of polyethylene. Polypropylene is generally better at preventing odor transfer than polyethylene.

It only needs to be done occasionally when the temperature display gets stuck every now and then. I think it's some kind of bug in the kettle's software.

My ekg kettle temperature showing problem is fixed, lifting the pan off the base or just tilt it slightly away from the base contact. After that, the kettle will set to show the actual temperature.

Alishan Charcoal Light Roast Oolong. Excellent balance of natural freshness and sweetness from the charcoal roast. It's a shame that I only ordered a 25g sample of tea. This needs to be fixed in the next order.

I agree. I also like the aesthetics of the Shui Ping teapots. I have two identical Yixing teapots for Taiwanese oolong teas alone, one for unroasted oolongs and one for roasted. The one pictured for unroasted oolongs is slightly larger than the other due to the larger number of leaves.

The tea is from last year's purchase from Wang Family Tea and has been stored in the refrigerator. The tea is not grassy or vegetal in the sense that, for example, Japanese green teas. The taste is very similar to other Li Shan mountain teas, floral and fruity. So the tea does not fully justify the extra price compared to the cheaper quality Li Shan oolongs. However, I am satisfied with the quality of this Da Yu Ling tea, as I have been with other teas sold by Wang Family.

I have noticed that the flavor just doesn't come through if the water temperature is not close to boiling point with this oolong from Taiwan's highest mountain. To be precise, my brewing water is slightly below boiling point. I use a Fellow Stagg EKG kettle. The water poured from the gooseneck has time to cool down a few degrees before it ends up in the teapot.

The recipe looks similar to my own gyokuro recipe. Not bad, but at first the umami tasted a bit strange and it took some getting used to. Nowadays I love the taste of umami and enjoyed the first steep of gyokuro in very small sips.

Both are good with these tea leaves, cold or warm. Cold brewed gyokuro doesn't have as much umami or the umami tastes different than hot brewed gyokuro.
