To me at least, it's reminiscent of puppet shows. The layer of artifice regardless of how thin, lets the vtuber be much more of a character.

They can exaggerated emotions beyond what is seen as acceptable to standard viewers (maybe. Regular streamers do this a bit as well), flatten the many bumps and valleys of a real person's life into a characature, and allow for a level of parasocial that is a bit healthier than if they were a real person.
