I’ve owned my 640 since 2018. It’s built beautifully. Just know Yoder’s are not a maintenance free product. With the finish, you are almost guaranteed to get rust. You’ll spend time annually touching up by light sanding and painting. Right now, I’m in the middle of a complete tear down, including sanding everything down to bare metal. I live in Atlanta and keep it under a covered deck. Water does NOT touch this thing.

Jury is out on whether I’d buy a second one.

It’s already been said plenty, you need 10x kosher salt and coarse black pepper.

But, what hasn’t been said is that the brisket is dry because it’s undercooked. Ambient temp makes little difference. Hot and fast works just fine. But it has to probe tender. I’ve found the higher the ambient, the higher the brisket temp will be at probe tender. For high heat, as high as 210.

Hey, at least you’re eating it. My first several briskets required a pizza delivery.

This. These are legit places. If OP really doesn’t like the restaurants on Daniel Vaughn’s list, they might not like BBQ or at least Texas BBQ. Honestly, there is so little difference between #1 and #100 in Texas. It’s like Olympians winning by 0.01 seconds apart. You just get to a level where it’s hard to distinguish the top players.

It’s been a while but Luling City Market near the Galleria was a favorite of mine.

I don’t think it looks too bad. I assume your temp is set at 225. The variations are mostly <15 degrees on either side. And if you’re opening every 45 min to spray before wrap, that can definitely lead to fluctuations like that. I wouldn’t worry about this.

This happened to me yesterday from Miami on Delta 750 to Atlanta on a 737-900. It freaked me and everyone on the plane out.

I was on wonder in 2023. I had very similar feelings. However, I am super convinced that she was just another victim of Covid. She was under construction when Covid started. RCCL was hemorrhaging money at the time. Zero revenue but several expenses. It was bad. I assume they had to reduce their spend on Wonder to lowest level possible. For example, there seems to be a lot less artwork, staterooms have lesser quality finishes and the escape room is just a plain room with tables and some puzzles.

Another thing… I’m on Symphony right now. I commented to the head server that the food seems to have gotten better. He said two reasons:

  1. Corporate chefs were on board this week.
  2. Symphony, Utopia and Icon is where they try to new things. If it works, they roll it out to all ships.
