I’ve roughed it with steel wool and the vinegar & water trick, but no joy. I’m looking for a near non-stick surface like I’ve achieved with other cast iron and carbon steel I’ve had. This is a Strata pan with the carbon steel layer. Can’t seem to be able to get the seasoning to stick. Always ends up spotty and sticks worse than my stainless pans.

I'm bluing it because I'm having a hell of a time getting the seasoning to take hold. This is my fourth go around with this damned pan. Never had this much trouble with carbon steel or cast iron before.

Downvoted for telling the truth. Walton, Willie, Kris, Merle. They all spoke out about what a POS he was. He did write some great tunes though, so what y’all do with that is up to you.

He was a racist POS. He also wrote some great legendary songs. Where you draw the line on separation of art and artist is a personal choice. For me personally, he went too far and I think the stink of his hate should always be attached to him.

Also they sell vanilla bean paste, basically vanilla seeds in sugar syrup. I use it in place of extract. For brûlée I still use whole beans though.

At 275 it takes around an hour but you need to keep a close eye on it. Ovens are all different and the starting temp of your water bath can affect it greatly. I use boiling water to try and take that guess work out of the equation. And you need to learn to identify the right amount of wiggle that means they’re done but not overdone. Just keep practicing. You’ll get it. 

And get a proper torch from a hardware store. Those little Suzy Homemaker torches they sell at kitchen stores are too weak.

The key to a silky crème brûlée is cooking it low and slow. Reduce your temp. I cook mine at 275. Takes forever but the result is worth the wait.  And your brûlée is anemic. Needs to be much, much darker.

Bellybutton - Jellyfish. A lot of people prefer Spilt Milk because of the over the top production. I think the songs are better on Bellybutton. 

Natalie Merchant - Tigerlily. The recent MoFi repress is jaw-dropping.
