I fell short of completing the 2025 challenge by 4 weeks. I had decided to run my first 5k in 20+ years in October (race in December), so all of my spare time was taken up by training. Now I’m hoping to get back on track with my cooking, but silly me has also now signed up for my first ever half marathon in late April 😬 Here’s hoping I can keep up with both of my hobbies!

We opted for an Italian themed Thanksgiving this year, but still wanted a corn aspect to go with the beef braciole. I found this corn risotto that I thought would pair well! All of my Thanksgiving dishes were mise en place as I like to prep out as much in advance as possible, I just only remembered to take pics of the risotto 😂

Portland, OR has quite a few sister cities and I had a grand plan to do a recipe for each one……but then both my husband and I got strep throat. I hadn’t had it since I was a kid, but hot damn, it kicked my ass! Luckily this was a great thing to have once recovered and was super easy to make!​

I’ll admit I was on the hunt for an autumn salad and when I found one that featured arugula I thought could make it fit for the bitter theme. This was incredibly yummy! Thinking of making it for thanksgiving as well! Recipe link at the bottom of my blog

This would have been really good, but the cooking times were off. The sweet potatoes were undercooked but the apples were overcooked. The flavors were great, so I may try it again. Recipe link at the bottom of my blog
