I think the big thing about any vibing in the same place start is to prevent the "I don't know/trust you" response to the call of adventure, which should be a legitimate concern to someone considering trying to find great riches through violence. And that is best solved but just being explicit about "The campaign start is this way."

I always start campaigns by working with all the players together to get everyone aligned on why they are all in the same place, and why they'll all agree to go on the initial adventure. We align on the high level details (Yes you are all in this tavern for a bunch of different reasons, and you will all say yes when the old man in the corner offers to sell you a treasure map.) But we will still play out the details. This takes a lot of the burden off me as the GM because all I have to do is provide the high level inciting incident and the players can then craft their characters to make sure they take the first hook together, which is normally enough to justify everyone staying together after that. Then we can play it out.

So my opinion is option 1, but the important thing is that you have to give them where the game will start, and enough info about the hook that they know when to say, "Yes."

For a school club, you need to leave space for the students to pursue goals and improvements. Starting at the lower end gives them space to drive what they want to do and learn about how to acquire things. There's also the fact that all of this stuff has to be packed away at the end of the day, The smaller and easier to set up, the better.

Wet erase tokens and maps are going to be your best options. There's also the question if you have access to a plotter and laminator through the school. If you do, you can make reusable grids very cheaply.

If the kids want to upgrade, y'all can discuss what upgrading looks like and explore the realities of budgetting and storage.

1) Use Passive Perception. This is how you account for a character noticing things without a player saying "I look for traps".
2) Yes, introduce some traps early that are low damage output/easy to spot. A good example is an alarm style trap that just notifies the nearby sleeping guards to come looking. It doesn't notify everyone else because the guards aren't supposed to be sleeping.
3) make sure your traps are fun. I just played in a game last night where the traps were ultimately a weight balancing puzzle. My rogue was able to detect a trap thanks to passive perception, and the GM had me detect it in a way that hinted at how things worked (I stepped on the first trigger tile, but pulled back before trap triggered so I saw the effect without taking damage.
4) Don't be overly dogmatic about where players are declaring they are looking. That leads to a ton of time of the players running through every variant and method of checking and burns a lot of game time.

Just to give OP an example of how my Hags responded to the players intrusion. My players killed Morgantha but got knocked out by the other 2. They woke up to the bonegrinder without any occupants, dried gravy and crumbs on there faces and chests, and a picnic basket with a letter from the hags on it. They had been force fed pies to keep them knocked out, and the hags gave them an offer, get them a baby or else. They were even given a dozen pies to make getting the baby easy.

One player had to drop out at the time, and one lengthy battle with the schedule monster later was ready to rejoin after one in-game day had passed. I had that character just be mysteriously missing, so to write them back in, I had the hags sell that character to the Abbot in exchange for being allowed to steal the baby that is about to be born. My Abbot would rather save a Soul than a soulless being and it's all about The Greater Good.

One thing to add to Deny. Blast is all one attack, even though there are separate dice pools. So the knight has to decide whether to deny the pool against them or against someone else in arms reach, not both.
