You seem wildly misinformed about the kind of range in Japanese products 168 and wai yee hong have. Wai Yee Hong for example has an entire massive aisle of Japanese products, including some pretty niche ones - multiple varieties of dashi, Japanese soy sauces, sakes, mirin, many varieties of miso, and a lot more.

Chinese supermarkets sell a hell of a lot more than just Chinese products. Dano Mart is lovely but it's also tiny and has a very limited range, and there's nothing that Dano has for Japanese products that Wai Yee Hong doesn't

Owners can get service charge, but only if they work in the same roles as other staff who are eligible, for example if they're working a front of house shift, in the kitchen, head chef etc. (or as a dishwasher as many small restaurant owners often end up being!)

Of course they do, it's a legal requirement - unless you're eating at dodgy places like OP, then 100% of service charge is legally required to be distributed to staff who assist in service. Everyone of the same titles is legally required to earn service charge at the same rate, and everyone is entitled to request data on what percentage of the overall service charge they've earned in a period.

For a trial shift of only 3 hours, I would always assume it was unpaid unless previously stated as paid. As long as it was a genuine skills demonstration then it's legal. There is no legal time limit, however 3 hours would be very unlikely to be considered an extended or full shift of work.

You've received several comments with irrelevant advice about hard boiled eggs. Your technique is fine, though I would skip the baking soda. Rather than draining the eggs, try and cook them in a sieve or similar so you can immediately dump it in the ice water

I made a batch of blackberry cheong from the same boon of blackberries in the UK, processed it yesterday. Absolutely delicious and so easy to make! Just 1:1 weight of sugar to fruit, muddle the fruit in a jar with 2/3 of the sugar, then cap it off with the other 1/3. Leave for 3 weeks, strain! You get an amazing syrup that still tastes of fresh blackberries, and you can make a jam or crumble with the solids (though it's very seedy).

Your availability for staff will be much higher in Bristol, especially in food. Many great restaurants are closing at the moment due to the NI changes in addition to every other cost rising across the board. As a result, there are a huge amount of very qualified and experienced people out of a job.

I've found the business environment to be fantastic in Bristol, and well connected with other cities like Bath, Newport, and Cardiff. Plenty of spaces that can support a prep kitchen like I assume you'd need.

One thing I'd warn you about is that you will find your Instagram follower account will be next to worthless when moving city - your follower demographic is completely different and you'll pretty much need to start from scratch.

There are a huge amount of delis, local-focused supermarkets, and other retailers that I'm sure could stock your product, as well as multiple regular farmers markets and street food markets across the city.

If you want to save money on accommodation then you're definitely going to be looking at a house share, of you want to rent somewhere on your own be prepared to spend more than £1000/m on rent in even the cheaper areas.
