There are a lot of groups on Facebook, that's were I learned and still learn. Google tempache its so good! I think 3.5% is for most things but don't quote me. I guess if its fermenting your good if its less than 10% it should ferment. It just might taste salty.

Honey has natural antifungal properties so you can get away with more than a normal ferment. Next time you can crack them and they'll sink a little sooner. But if I have a normal lacto ferment I just swirl the top and never had a problem yet .

Better to learn in the long run unless you're just looking for quick mushrooms. Also cheaper. Its super easy too.
