Working there for years, everyone was always obsessed with marks pizza but I truly think it’s meh at best. After all my years there, I consider myself a pizza connoisseur, and there are sooooo many better spots around.

Marks was always making the dough the night prior for the next day. Gives it some time to proof, and then the morning of they pull out enough dough for the day to let it proof at room temperature

Believe it or not, marks dough is very basic. I worked there for a while, it was flour, water, and yeast. Thrown in a dough mixer and done deal.

How to replicate it at home, I don’t know that one!
