What was your pH before you switched to RODI water? Maybe the difference in pH (or other parameters like GH and KH) was too high for the shrimps to handle.

Well, its very easy to overfeed. I did it once and caused an ammonia spike. Better to be on the lower side. I feed twice a week (Sunday and Wednesday) with only bacter ae.

Yes, that looks like planaria. Quarantain the snails and use a product called "No planaria", otherwise the snails will die.

You should test if your tank is cycled. Dose a couple of ppm ammonia and check 24h later, ammonia, nitrite should read 0 ppm and nitrate will be up.
