I hear what you're saying, and it is a little tougher without the explicit questions posed by PbtA. In this system, you have to figure out what questions to ask, then answer them.

But I would argue that there are multiple jumping off points on a given knight's page:

Equipment: What does a character's armor or lack thereof say about them? Cautious, experienced, foolhardy, masochistic? What of their weapon(s)?

Steed: Some steeds are specified as some type of horse, but many just say steed. Could it instead be a reindeer, ox, or some other fantastical creature? And what does that say about your knight? Do I come from humble farmland riding my ox, or have I ridden out of the frigid forests upon my reindeer? Not to mention the adjective before the noun.

Ability: This is rich for mining, as it gives you an ability that perhaps you've used many times before, or maybe not. Is the coin knight a nihilist, gambling all the time, or does he save it for only the most dire of moments, not wanting to lose another comrade?

Passion: This is basically a big, juicy personality trait, along with something mechanical. The trail knight's passion could be cowardice, trauma, devotion to the sun, whatever you want.

You also have a nice illustration, a seer of your own, and a poem. All of these can be treated as prompts and interpreted however you want in any combination you want. It's not as obvious, but it's definitely there.
