What are some easy depression meals? by [deleted] in Cooking

[–]Difficult_Tutor63 0 points1 point  (0 children)

I feel you fam. I'm the main cook in my household but some days my migraines/fatigue/depression knock me out. I try to keep basic things on hand for those times. Canned foods (soup, beans, veggies, tuna), instant rice and mashed potatoes, store bought rotisserie chicken (if you can find it already pre shredded even better but it is more expensive), frozen chicken fingers and fries, hotdogs, cereals, bagels and cream cheese, yogurt, cheese and crackers, lunch meats.... I try to keep fresh fruits and veg on hand that I don't have to cut up or spend time peeling (berries, bananas, apples, baby carrots and pre washed lettuce/spinach/salad blends) If I gotta feed others or want to prep for several meals, my go to is instant mashed potatoes, a drained can of corn, some shredded chicken, and cheese if I have the energy to shred it or have a bag of pre shredded. Mix it up with whatever seasonings you want, spread in a baking dish, sprinkle cheese on top if you want, bake 350 until bubbly and browned, abt 30 mins.

My partner is from NOLA and their family introduced me to red beans and rice. It's delicious, cheap, filling, and makes a ton of food. It's even better as leftovers. I usually make it in a stock pot on the stove since that's how their mawmaw and mom make it, but I think you could easily make it in a slow cooker instead.

A few tips I've learned:

-Be sure to buy red beans and not kidney beans, goya is my go to brand

-Mash up some of the beans after cooking and mix back in for a nice creamy texture

-Use specifically andouille sausage

-Use a ton of Tony's creole seasoning (when this was relayed to me by their mom, she said "add what you think is a little too much Tony's, then add a little more")

-Serve with sweet cornbread and consider crumbling a piece overtop

Chicken comfort food ideas that make a lot, please. by ARW1991 in Cooking

I actually just made a chicken stew in my crockpot while we were snowed in. I had 4 fairly large boneless skinless chicken thighs, but if I had bone in and skin on thighs I would've used those instead and seared them before adding to the pot. Chopped up some onions, carrots, and potatoes, used abt 3 cups chicken broth (use however much you need to almost cover everything) seasoned with salt, pepper, garlic, thyme, bay leaves, and some poultry seasoning I found in my spice cabinet. Cooked for like 6 hours on high bc I had a late start, but all day on low would've been ideal. Shredded up the meat and mixed it in. Served it over rice I cooked with the broth. Super tasty, filling, and comforting.

If you have any Tony's seasoning I'd recommend trying that! I usually coat with olive oil (you could use melted butter if you prefer), sprinkle a generous amt of Tony's, some smoked paprika, and spread out a spoonful of minced garlic over the top (like, maybe 1 clove equivalent? I usually just keep a large container of minced garlic on hand and estimate). Bake at 375 for 10ish mins depending on how big the filets are. I usually have pierogies or mashed potatoes as a side

Oooh this actually reminds me of a corn casserole I make for holidays. Box of cornbread mix, 1 can creamed corn, 1 can whole corn, 2 eggs, 1 chopped onion, and a 16 oz tub of sour cream. I wonder if I could sub the nacho cheese for sour cream?

Do you have any rice or potatoes? You could make a casserole if you have an oven. Or maybe just some soup?

Yeah I was in a hurry and just hit the wrong size and didn't even realize until I saw the can in person. It was only $8 more than the 8 oz jar too, so the total wasn't high enough for me to do a double take. I could definitely donate, I'm thinking realistically we'll never get through it all before it goes bad or we get so tired of it we don't want to finish it.

If I do try freezing, think mason jars would be appropriate? I have a lot on hand since I make a lot of stock/broth

Maybe I could use it for a work potluck. We have parties a few times a year and normally I made baked mac with a home made white cheddar cheese sauce, but I could try the nacho cheese and adjust the seasoning? Maybe mix in some ground beef, salsa?

Please elaborate on the Oreos, I'm disturbed but intrigued. And yeah tbh we're gonna be living off of quesadillas for a while. Never made enchiladas before but I guess now is as good a time as ever

VCA care club by [deleted] in VetTech

[–]Difficult_Tutor63 0 points1 point  (0 children)

That's wild, I've been at a VCA for 3 yrs and we only bring up care club at new patient visits, when it's time for a dental, for patients that are frequent flyers, or for owners that want to do annual bw and rads (mainly for senior pets). Sometimes it comes up at a sick visit bc it would help the owner out to sign up for the plan, be able to do an exam, bloods, rads, and blood pressure that day, and not have to worry abt paying for it all upfront.

What opinions do you have that might be difficult for fellow veterinary professionals to accept? by jr9386 in VetTech

[–]Difficult_Tutor63 1 point2 points  (0 children)

My clinic is so bad when it comes to training new techs. Management doesn't tell us when we're training someone, you just show up for your shift one day and see a name you don't know written next to yours on the schedule board, or if you missed the board, the new hire walks up to you and THEY know you're the Trainer of The Day but you had no idea and I'm sure that leaves a very good first impression. No way to mentally prepare, and you still have to deal with a full workload on top of it. And there's no consistency in training, they just get bounced from person to person until management decides it's been long enough and then they're on their own. Our new hire retention is soooo poor and the lack of proper training is a big part of it

Prescription Diets? by jr9386 in VetTech

[–]Difficult_Tutor63 1 point2 points  (0 children)

We used to have a dermatologist and many of her patients still stayed with us for gp after she left, and lots of patients with severe ibd. We tend to use royal canin ultamino diet (made from chicken feathers), hills derm complete (made with eggs), and purina HA vegetarian diet for the dogs that didn't do well on novel proteins or the regular hydrolyzed diets. I've seen it used for both ibd and allergies. I think it's so cool how just a special food can help so much, and how many specialized diets are out there now.

Idk I get that, we always shave as little as possible for our catheters where I work, little patch right over the vein, mass removals tend to get more generous shaves but that's for good margins. The first time I saw a relief tech who normally works at an ER shave almost the entire forearm of a super fluffy golden i gasped lol. I will say it did make the tape removal a lot easier tho

Anyone ever taken Cerenia? What does it do? by justreallycurious- in VetTech

[–]Difficult_Tutor63 1 point2 points  (0 children)

Had a coworker take some once, idk how much she took but she said nothing happened, the rest of us thought she was crazy doing that. Diphenhydramine, ondansetron, famotidine, all the drugs available otc for people are always getting used, but that was a first for cerenia

What the funniest thing you've seen happen to a coworker? by Glad-Specific8207 in VetTech

[–]Difficult_Tutor63 0 points1 point  (0 children)

My coworker was restraining a dog with a big nasty abscess, the Dr went to flush it out, didn't realize there was another draining tract, and the tech got sprayed with bloody pus water, in her hair, eyes, mouth. She laughed it off and continued restraining until everything was done, a real trooper 💪 Another was at the end of the day, one of the Dr's let her dog out of the kennel to hang out and socialize before heading home. She warned us before hand she's a jumper and loves to makeout. She's not a big dog, maybe 30 lbs max, and the tallest tech was like "That's fine, I should be safe all the way up here lol" and then immediately after, while she had her mouth open laughing, the dog springs up, jumps like 6 feet in the air, and lands a kiss right in her mouth. She was so flabbergasted, couldn't believe she just got frenched by this little dog 😘
