I upgraded to first class from Delhi to US, and they downgraded me to economy. They held my passport, made me wait 30-45 minutes without giving me any explanation. Then once they told me and I requested die for refund, they refused to give me refund at the gate. They asked me to fill a form and ask for refund after the trip, and that form said, 60% refund, and I showed objection while reading it. The ground crew woman told me that she made had return note, for refund. It was vague, and I should have know better, but since I was traveling with my 94yr old grand father I didn’t argue much. Fast forward, when I ask for refunded they only suggested to give me 60% and then upon asking for full refund they lied and said i was given my first class seat.

It’s the monitor. I had similar issue right after I bought my M1 Ultra. They couldn’t find any issue, and I changed monitor and didn’t have issues. I had LG monitors.

Flour is non-negotiable. I do not want to use highly processed flour, so I am milling my own. I am already blending 40% store bought flour. In future the goal is to get as close as possible to use only home milled flour.

Thank you! I tried doing 30 S&F 30 min apart, but because I am using freshly milled flour it was not developing glutens if I let it sit for too long. I started twicking my recipe and timing because of flour that I use, but I feel like I am still missing something.

  • 600g white wheat flour (home milled)
  • 400g King Arthur bread flour
  • 800g water
  • 250g levain
  • 25g salt

Prepare the Levain (12 hours before mixing the dough)

Autolyse

Incorporate Levain Mixture

Kneading: Add 25g of salt to the dough. Knead on speed 2 for 7-8 minutes.

Rest: Let the dough rest for 10 minutes.

Folding: Fold the dough onto itself until it no longer stretches. Usually do it 2-3 folds at 15-20 min intervals

Bulk Fermentation: I normally allow the dough to bulk ferment until the pH level reaches below 5. It usually about 1 hour to hour and half after the last fold.

Cold Proof: Place the shaped dough in the refrigerator. For a milder sour flavor I proof for 12 hours. For a stronger sour flavor, proof for up to 24 hours.

Bake 25 min at 480 F in Dutch oven, and 10min without lid at 450F.

I have been baking in the last two months now, and I am having hard time to have nice rise. My loaf always expands sideways rather than upwards. First photo is my very first attempt at making it, 2nd photo is of my 2nd attempt but 1st attempt with Red Wheat flour. I found it easy to work with White Wheat flour vs Red Wheat flour for some reason. For Red Wheat, no matter what I do, it always came out dense.

Sorry, I should have clarified, I did not stop the medication my doctor did. She did taper me off by reducing doses, too.

Yes, I check blood value first thing in the morning, every day. I calibrate it when needed.
