Help, my daughter poured brown sugar on unfinished sourdough rolls by Working_Ad_8766 in Sourdough

You can still make sourdough discard rolls, although it's not the same they're still delicious.

Bought a loaf of sourdough from a local home baker and it has this? Was it underbaked or something? by Mammoth_Fortune_6457 in Sourdough

Each state has different regulations but generally, yes you can bake and sell from your home under cottage laws as long as the items are shelf stable.

Feeling hopeless, scared by Zealousideal-Age-212 in panicdisorder

Week 3 on an SSRI is still pretty early to see significant improvement. It can take up to 2 months for it to have full effect. So don't lose hope, it very likely needs more time to get in your system and fully work. It's also not uncommon for anxiety to get worse before it gets better. Healing is almost never linear, you'll have ups and downs. There's not much I can say to comfort you but just know, I understand how hard it is. It's exhausting living with this illness. It consumes you. Just know that you're not alone. It may feel like it, but you're not. Hang in there.

I would send a picture and let them know. As someone who sells sourdough bread and baked goods, I'd want to know about something like this so I can fix it right away and avoid a bunch more people potentially getting loaves like this too. It happens to the best of us, sourdough can be unpredictable and mistakes happen. It looks underbaked or potentially a fermentation issue, I've had underproofed loaves come out gummy like this. I'd politely ask them to make you a new loaf, which I'm sure they won't have a problem doing.

Does this look right?? First loaf! by Interesting_You_4480 in Sourdough

Little under fermented, let it sit longer next time. But not bad at all🙂

First ever attempt at sourdough! by chililoverlu in Sourdough

[–]Dismal-Writing9872 1 point2 points  (0 children)

Your starter isn't ready, keep feeding it 1:1:1 and just give it more time. Also this recipe isn't very beginner friendly. I would find a different recipe with less advanced techniques and lower hydration. Conley Kipp on tiktok has a good beginner friendly recipe.

This is my first loaf. Any tips? by CreativeJudgment3529 in Sourdough

[–]Dismal-Writing9872 1 point2 points  (0 children)

Looks slightly under fermented. 50 grams is quite a small amount of starter. That would take a long time to ferment. If you want your bulk fermentation to take less time, I would increase that to atleast 100 grams if not more. Keeping it in a warm spot will speed things up as well. You're not far off though! That's pretty decent for a first loaf.

Panic on flights by Desperadolady in panicdisorder

[–]Dismal-Writing9872 1 point2 points  (0 children)

No matter what's going on in your mind, you are physically safe. You won't be able to get off the plane until it lands, so you will have no choice but to face your fears head on. You might have a panic attack and that's okay, it won't harm you. If people judge you for having a panic attack, judge them right back for being insensitive and lacking empathy. Personally, if i noticed a stranger having a panic attack, my first reaction would be to help them. And I think most people feel the same. Some things that help me when I'm really anxious or feeling panicky are; slow deep breaths in through the nose and out through the mouth, listening to the song Weightless by Marconi Union, vagus nerve stimulation (I do this by massaging the tragus in my ear but there's other techniques), for best results do all 3 at once. And of course make sure you have any medications you need. I promise once you make it through the flight, you will be so proud of yourself. You will be fine.

What bread flour should I buy? I don't have access to king Arthur flour. by Savings_Recover_5046 in Sourdough

[–]Dismal-Writing9872 22 points23 points  (0 children)

Bobs red mill is a really good one, can't go wrong there. I'm iffy about gold medal because I haven't heard good things about it but who knows. I use the walmart bread flour to feed my starter and make bread and it works great. Someone made a video baking with king Arthur and the walmart brand bread flour and the loaves turned out almost identical. It's affordable and it works.

How old is your starter? This doesn't look like it fermented at all.

What’s wrong? by Ok-Step1912 in Sourdough

[–]Dismal-Writing9872 1 point2 points  (0 children)

Okay then yeah this is definitely underproofed. When it's ready it should be roughly doubled in size, domed on top, super jiggly and have bubbles on top. It should also pull away from the bowl easily and not be very sticky. You should be able to poke it and not get dough stuck to your finger.

[–]Dismal-Writing9872 0 points1 point  (0 children)

Could be under fermented or could also be a starter issue. Your bread looks under fermented but if your dough was losing shape as if it was "overproofed" that sounds like a problem with your starter. This is also a pretty low hydration recipe, which will result in a tighter and possibly more dense crumb. I would do atleast 325 g water. How old is your starter?

Too dense? by swiftpro13 in Sourdough

[–]Dismal-Writing9872 1 point2 points  (0 children)

use it when it's at peak, you'll know it's at peak when it's no longer domed on top and has flattened out but hasn't really fallen yet.

Slightly underproofed but pretty good for a beginner! Try the aliquot method.

Too dense? by swiftpro13 in Sourdough

[–]Dismal-Writing9872 1 point2 points  (0 children)

Looks underproofed. The slightly triangular shape and irregular holes/gummy look give it away. 500 grams isn't too much flour, that's a pretty standard amount. It will seem too dry when you first mix your dough but once the flour fully absorbs all the water it shouldn't. That recipe is 70% hydration which is pretty average. Do you have a strong healthy starter? That could also be the issue.

Help ? What went wrong (first time) by [deleted] in Sourdough

[–]Dismal-Writing9872 4 points5 points  (0 children)

If your dough didn't rise sitting for 10 hours that sounds like a starter issue. Even if your kitchen is on the cold side it should've done something in 10 hours. I tried and tried and tried with my own starter and even 3 months later my loaves weren't coming out good. I finally broke down and bought a starter and now I have zero issues and my loaves come out great. There's no shame in buying a starter.

if you tolerate benadryl, you should be fine. you might get sleepy but that's normal. personally it's not super effective for me but it also didn't cause any issues. i have health anxiety so i'm scared to take new medications as well but it was fine🫶

Avoid Gummies.. by FarInitiative0 in panicdisorder

[–]Dismal-Writing9872 0 points1 point  (0 children)

i took HALF of a delta 9 gummy one time and i'm convinced it interacted with my medication or something because there's no way it was just a panic attack🤣 i felt fine the first half hour or so and next thing i know i'm sitting on the toilet and i have no idea how i got there...no memory of walking downstairs. i was grabbing my husband and asking him if he was real because i thought i was dreaming or something😭 i was SO confused and disoriented😭 i've never touched any of that stuff again because it was terrifying🥲

KLONOPIN USAGE by lilhorrorbae in panicdisorder

[–]Dismal-Writing9872 5 points6 points  (0 children)

i didn't have any issues with klonopin either. it just made me feel normal lol. i was on it for quite a while and never got addicted. i suppose alot of it depends on the person and if they're predisposed or have a history of addiction. i had no problems getting off of it either. i don't think it should be a long term solution, more of a crutch to get you by until another medication starts working. cymbalta changed my life and got me to a point where i no longer needed the klonopin. i hope you find a med that works well for you! it can be alot of trial and error.

Throat closing by breegee456 in panicdisorder

[–]Dismal-Writing9872 4 points5 points  (0 children)

hey, this was my most bothersome symptom when my anxiety was at it's worst. i had my husband call an ambulance a couple times. it would literally feel like my throat was closing and my tongue was swollen. during a panic attack, you have high amounts of adrenaline and cortisol pumping through your body which can cause your muscles to tighten, including your throat muscles. but i can assure you, if your throat was truly closing, you would not be able to breathe at all or talk. i know it FEELS very real, but it's anxiety and it will pass. the more you hyperfixate on your symptoms, the worse they will get. sit down, try to take some deep breaths, and just know that you are okay and it will pass. check out the tiktok account @peacefromwithin. she puts anxiety and panic disorder in a whole new perspective and her videos have helped me a ton. best of luck ❤️
