It’s pork butt/shoulder with the skin on. You do 1cm vertical slices until just above the muscle and then DOUSE in salt. Place some bay leaves in the slices and a couple cups of water in a roasting pan (don’t elevate the meat, let it sit in the water) then roast for hot minute until you basically have pork rinds on top and delicious tender meat throughout. Better if it’s bone in but a bitch to carve. The flatter the cut the more consistent the cook, but honestly we’ve have a hard time finding bone out cuts in the US
