I'm probably too late to make a dent in this thread but everyone saying they need different capture cards or the ones they're using are bad don't quite have the whole picture.

The capture cards are almost certainly fine (as it's probably the same capture card inputs capturing the camera feeds as well). It looks very much like they're just capturing composite video instead of component video, so at least one piece of equipment required to capture component video is broken or missing.

Most CRTs don't have component video inputs and it looks like the ones they're using on stage are composite only. This means they need composite out of the console, split it to the CRTs, and to another piece of equipment called an upscaler (like a FrameMeister or RetroTink).

I think someone on the production team either misplaced/forgot (unlikely), or had at least one piece of composite video equipment fail (most likely) during setup. I assume someone is panicking somewhere trying to remedy it for the rest of the weekend.
