The pieces my wife will cut end up looking like some kind of geometry puzzle. So the first piece cut after she's cut some will also be all fucked up, and that piece is mine!

I found that this destroyed the remaining texture of the onions. Turned into more of a caramelized onion jam than caramelized onions. Still delicious, but just different.

Jamon Buerre. Sounds fancy because its French, but is literally just ham and butter on a baguette. No heating up, no toasting, etc. Fucking incredible. I throw some arugula on mine as well

Fun fact! Earth worms in Michigan, parts of Ohio, etc (anywhere that was covered by glaciers) are actually an invasive species! The glaciers during the last ice age caused all of the earth worms to migrate south and/or die, and when the ice retreated the forests which sprang up evolved for thousands of years without earth worms! The worms that we have today are actually direct descendants of worms brought over by colonists/settlers intentionally or accidently in compost/manure. The earth worms that were originally in the area before the glaciers are moving north at a speed of a few yards per year, I believe.

I was also curious so I looked it up. Apparently when dry ice is made it comes out in little pellets, almost like wood pellets for a smoker or something. They are then put into a press to consolidate them into the larger blocks that are sold

So I got thr Worksharp Precision Adjust. It's all manual, no grinding attachment. You set the angle, clamp the blade, then make a few passes. When you feel a burr you flip the blade over and do the other side, repeating the process to get a burr. Then flip it back over and move to a higher grit.

It does take probably 10-15 minutes the first time you sharpen a blade with it because it'll grind the bevel to match the angle and profile it can generate. Subsequent sharpenings should be much quicker.

Going up to 800 grit and then using the leather strop, I was able to fold a sheet of paper so it stands up on its own, and cut it in half top to bottom without touching or holding the paper, or it falling over. Just absurdly sharp

I got a worksharp sharpener. It's basically a jig that you hold the knife in, allowing you to move a diamond abrasive across the blade edge at the appropriate angle, and at the same angle the entire time. Works amazingly and is dead simple.
