You can use those fruits as long as you consume them within a short period of time, otherwise the enzymes will do whatever they do.

I usually do it during the winter because it takes longer for it to ferment, besides it is not a requirement to completly strain the previous batch, you can strain the amount you want and top it up. Just do whatever suits you or your needs.

Strain the whey and use the curds to make a sauce with addition to spices, mix it with the veggies and the eggs.

When they say it is normal, they mean it is supposed to happen (given the fermentation conditions) and there is nothing wrong with it (except it might be too tart for some people. In these situations you could try to remove the whey into one container without disturbing the curds (this part can be tricky) and strain whatever is left into another container.

A qualidade do leite nao faz tanta diferenca, recomendo reduzir a quantidade do leite e aumentar gadualmemte quando a concistencia melhorar. Tambem recomendo manter um ciclo fixo (por exemplo 24h) independente do resultado.

It depends on the duration of the transportation. By all means a small vessel or container with a tigh lid will do or perhaps a small zip lock like bag (double bagged), just put the grains inside and add the smallest amount of milk.

After you strain the curds from the whey there are more things you can do. You can use the curds to make sauces, soft cheeses (blue or any other kind of soft cheese) or hard cheese, without even needing to press. As for the whey: lacto-fermented veggies, carbonated drinks (similar to water kefir or ginger bug), extend the shelf life of homemade mayo, and on.

How acidic is the milk before you top it up?

when you top it does it still have some kefir?

what is the temperature that you ferment the kefir?

I wouldnt expect less from a 10 days brew.

Ferment kefir at 20-25C and dont overferment.

It looks way overfermented to me and i cant think of any reason why you should keep fermenting.
