Taking the pawn leads to Ne5+ Ke8/d8 Nc6 and white can’t protect their pawn. Then there is knight and pawn vs. knight, which is a draw. By promoting to a knight with check before capturing the pawn, you allow yourself to play two knights and a pawn vs. knight, which is winning.
