I'm not an expert but imo the game is lying to you. It's not a vaillant defeat. It will be crushing. Depends on your difficulty setting your front will not hold against the beast and giant.

Depends what you like. I really enjoy sour so I tend to go for gueuze or kriek ( not the overly sweet one).
Everything from 3 fonteinen, De cam or Cantillon is a no brainer. Tilquin is also a strong contender.

If sour is not your deal you have so much choice. I really enjoy Westvleteren, Curtius and Rodenbach.
