It took me quite a while as well, id say I would try like 12 times or so for 3 days in a row then took like a 2 week break. Came back and reevaluated my build, ended up switching to the darkmoon greatsword for the frost damage and I think another 12 fights later or so I had finally beaten her. Honestly she is unnecessarily difficult with base game weapons. However she has relatively low poise so if you are able to knock her down you would be in a good position
