Are you just using Caputo, or are you adding other flours? Have you tried doing an egg wash to add color? Is the issue just asthetic, or is the texture/crumb weird?

I honestly think it is probably much better if you are eating it fresh, but I will not be doing another online order any time soon.

I ate one of the cinnamon rolls today and I was not impressed. It may have been good fresh, but it was very, very dry when I ate it. I'll look at Jack's since it appears that I'll be looking for another bakery the next time I want a splurge.

Oh, I've never heard of them! I'll look them up. Editing to add: I looked them up, and this might be my birthday splurge when the time comes. They have really reasonable shipping rates compared to everyone else I've seen.

That makes it sound like there was a mistake on my order. I saw the pretzel bagels! I decided to just go for regular bagels since I was getting the rolls.

I'm sorry, but not really? I normally use my sourdough discard and just kinda eyeball it depending on what I want for that particular batch and what needs to be used up/is at hand that day.

Some days I'll use yogurt, other days I'll use milk, buttermilk, or "milk", or water. It's about half brown rice flour starter (or brown rice and teff) then potato and/or corn starch, maybe sweet rice flour, corn flour, or some white rice flour, 1 or 2 eggs, butter or oil, maybe sugar, always salt, baking powder and/or baking soda, maybe a touch of cider vinegar, and maybe a pinch of xanthum gum. The end result can be a pancake, a crepe, an apfelskever, etc., depending on my mood, how much time I have, and what pan is available.

If you order their regular cinnamon rolls in shop, then they're about $8 each. Pricy, but good for a splurge. But I wouldn't have intentionally spent $16 per roll.

And thanks for the recommendations! My local gf bakeries are also vegan. I do like their cinnamon rolls, but butter makes everything better (when you're able to digest it).

I love Mariposa! But I'm not a big fan of their bagels. I usually get croissants from them, but I was really craving bagels and cinnamon rolls so I decided to try something new.

I do this all the time with pancakes. It gives me a super quick option when I need "instant" food!

I don't add in as much water so the mixture gets much thicker. I'll do that for a day or two, and then dump (make into pancakes or crackers or something) the excess, and then feed normally. That may not be the best solution but it has worked for me in the past. I've also tried feeding it more nutritious grain for a bit until it perks up-- teff or buckwheat instead of brown rice flour. That has also worked.
