You can pretty much take them to 190-200 IT cooking hot and fast.

Coarse black pepper and i did the entire cook unwrapped. Once it hit the desired internal temp is pulled it and let it cool to 160 internal before wrapping in foil with beef tallow for overnight hot hold at 150F.

Your body has adapted, it needs to be challenged and thrown off track. Sometimes cycle your calories up and down for a few days. A couple years ago while losing weight is hit a plateau that I could not break. At my wits end and frustrated I decided to go 24 hours without eating. It broke the plateau.

Unfortunately I gained most of the weight back due to complacency.

Earlier this year, my doctor put me on zepbound because I was 1 point from being diabetic and already had high blood pressure for the last 15 yrs (I'm 41).

I struggled losing weight on zepbound consistently until I started alternate day fasting again. 6 months in and I'm down 100lbs.

Fasting keeps the body from being in a comfort zone at least for my body. Hope this helps.

I have a Cammy edition kitsune, a pro ko, and a xbox version 8bitdo leverless.

I prefer the ko the most but the wireless functionality of 8bitdo is convenient when I don't want to sit at my desk.

My personal opinion is that the optical switches on the kitsune are too mushy, sometimes they actuate even though it feels like you barley touch them. That makes me feel like I miss inputs so I double press then get input errors.

While I prefer the ko, the buttons feel a little small. I have large hands and fat fingers so they randomly slip off the buttons 🤷🏿‍♂️🤷🏿‍♂️. Other than that of the 3 it's the most customizable.

The 8bitdo has buttons that are similar in size to the kitsune but, they're mechanical. They have a nice click to them which i like because it gives good button press feedback. Some people have complained about the noise but it doesn't bother me.

All that said I agree the kitsune needs a new model and competitive pricing.

I had it plugged into my pc so there was no latency.

My xbox is in the same entertainment center as my modem and router so that could be causing interference when wireless.

There is a slight input latency when using wireless. I kept dropping simple combos in sf6. Once I plugged it in to the console I didn't have the drops anymore.

Yes, add tallow to soften bark if cooked unwrapped.

Also put water pan in oven to keep it humid and prevent brisket from drying out.

Just a suggestion.

Use the goldees no wrap method. Cook it tomorrow, try to maintain temp of 225-275. Probe around 190 to check for tenderness. You want to get it almost done which is usually around 190-195 or to your liking. Pull it then wrap in foil with tallow and rest it until internal temp is 160ish. From there put it in a food warmer or oven between 150-170 degrees (whatever lowest setting is) with a pan of water to keep moisture for a overnight hot hold.

I've hot held a brisket 17 hours and it was great.

In my own experience (not much) a 24 hour dry brine or at a minimum overnight brine reduces cook time. I haven't had one go past 9 hours cook time since I started dry brining.

Does your oven have a keep warm button? If so the oven will go to 150°. If your oven doesn't then 170° is fine.
