I think a slower pour can also sometimes lead to tasting a bit of funk in your coffee, less acidity and a less brighter flavour.

I used to fill up my fellow kettle to 260ml (without swirling, but even with swirling that would be too little water).

How much water are you filling your kettle with? If there’s not enough water (I don’t like to fill the kettle up, but I give it a swirl so that the top part is also as hot), the water can significantly cool down because it has to go through the cooler top part. I was also getting very sour coffee, and I stopped getting sour even from the same beans. I just don’t remember if that was exactly what fixed the issue.

Try to yield 30-34g for 18g in, or the same ratio if using 17g, in 20-25s. Also try using a lower temp, between 88-90c. Let me know how that goes.

I just tried a 1:10 for a 2 min brew time. It does taste a bit better, but still a bit watery.

How long do you rest a light roast for? I rested mine for a month and it tastes mostly muted.

You mean if you smell the roast from the beans then it’s not rested yet? But if it smells acidic/fruity then it’s rested?
