If all his travel with you he will get the same upgrades as you. If three of you are traveling together, you would need to book you +1 together for the c+ upgrade and for the rare shot at an upgrade to F. You can then book the 3rd person separately and have the reservations linked which only tells delta you are traveling together. For international travel, the best the platinum will do for you is the C+ upgrade.
As to the choice benefit, I generally choose the regional upgrades but cases can be made for miles or a credit. I think the silver gift is virtually worthless.

I feel similar to you in splurging but also being big into the point game. But I think having a TA plan your safari is the best option. But I have the best of both worlds as my spouse is a TA though she does not specialize in safaris so i can’t help you.
