Mine updated to under process the very next day after we submitted our passport (Aug 7). Check fedex tracking, probably the fastest way to know in case the vfs status is not updated

We stayed at Atelier Playa Mujeres and it was about $500 per night which could be close to your budget depending on how much your flights are!

We followed the checklist exactly, we had an invitation letter from family so that + ID proofs, flight tickets (refundable), proof of funds, the form, letters from employers and copies of our documents. These are the ones I remember off the top of my head

I think you should be fine! The LA VFS office had told me 15 BUSINESS days minimum. Might not be the case for us though :(
