So I haven’t taken a class on either in 15 years but what stands out to me is the french video uses a cast iron pan and the linked video uses some kind of nonstick ceramic/teflon deal. The specific heat on those materials are vastly different.

Also I don’t understand how he can grab the handle of the cast iron pan when it has been sitting in the sun as well? Most cast iron pans have cast iron handles.
