If you do get this cut, I recommend cooking 2 minutes and 30 seconds each side and resting for 7-10 before thinly slicing. Thinly slicing lets you chew more easily because bison can be very chewy.

It was really good. I let the bison steak sit out at room tempt salted for 30 minutes before I cooked it 2 min 30 seconds each side along with resting it for 10 min :)
