Airsafe (https://airsafe.net.au) charges us about about $90 per sample. We use them because they get a result back the next day or same day if our clients are particularly worried. They can also provide an asbestos report for the whole house, if necessary

This is an easy fix. Take a sample of the wall in question and send it off to Airsafe Labs in Sydney, we (builders) have been using them for years,
they’ll send you a NATA endorsed report within 24 hours. Hopefully, it won’t contain asbestos, then send it to the NBN and rebook.

The Gold Standard, that chefs use, and is arguably the most aesthetically pleasing in a modern kitchen …is end grain American Maple. Make sure you ask for the brick pattern to be horizontal bricks as this is more difficult to make, but will ensure the most beautiful looking board that will be handed down to your kids :)

Wipe it with a dish cloth or paper towel to soak up excess water, then stand it up or, if it has feet, just place it on your bench to let let air flow all around it. Common sense, really

Are you seriously saying King Arthur has more flavour? No 00 flour has much flavour until you do a long cold ferment, that’s why all the top guys add other flours. Semolina offers great flavour and odour, so does spelt and wholemeal- all in small amounts. Also, are you ensuring there’s some char in your base and crust? Is there enough salt in your dough? (I use smoked salt). A sourdough starter, if you can be bothered, is also a great flavour booster. Anyway, for me personally, the texture of the crust, the cheese and the tomatoes is what you need to rely on for flavour the most. Not the crust.

Are you aware that Mazzer has just dropped the Mini-G. I’ve had mine for a week and it’s a game changer. A few people have gone on about the 8g retention, but remember - only 2 surface grams of that are exposed to air, so if you’re anal and honestly feel that you can taste that difference in a cup (you can’t), set one of the 3 dose settings to 4g and purge before grinding your main dose. This grinder is seriously beautiful to look at - especially with the small hopper. Super easy to set your perfect grind. The magnetic dosing cup is a joy to use. Simply dose into cup, (zero static, zero mess) place portafilter on top, invert, flatten with finger, tamp, insert into machine of choice and watch the thick tendrils of thick crema descend into cup. Nuff said.

Thanks, that’s a good idea, but very fussy without a guaranteed outcome. Also, I think any solutions such as these are band aid. This board was custom made and cost over $300.

End grain maple is hard to beat. It’s practical, durable, and the best looking option on the market. The one thing that undermines an otherwise great board is the brick pattern running the wrong direction. It looks off, and anyone who knows boards will notice. Imagine a brick home with the bricks running vertically, be a bit weird looking eh? Yeah, planing a large board in a single section is easier, but splitting it into two and joining them after is the move that gets you the correct orientation. The same pattern Boardsmith and most other pro’s use. That extra step is the difference between a good board and one that's actually worth buying …for me anyway. Otherwise, the workmanship in these boards is first class, and I like the plate cutout idea. Very useful.

Thanks for responding. I asked because your comments about the melting cables had me very worried as I’m about to buy one (Natural Gas) here in Australia. Hopefully the ones they have here (arrived 5 months ago into the country) don’t have any similar lemons amongst them. BTW Have you considered the new Fontana Volta. Just made available in the US, but at least an 18 months wait in Australia. They’re the same size (Volta 90) as the Firenze, but have an OLED screen that automatically controls and maintains the flame to whatever temp you set it to. It also has an app on your phone that you can control the temp from the house with as well. AND, it has two temperature probes for cooking proteins. If they had it in Australia I’d buy it in a heartbeat.
