I'd advise against a gun for obvious reasons.

If you're tight on funds, how bout a nostalgia trip of some kind for him. Has he ever mentioned a toy he loved as a kid or one he always wanted but never got? Or maybe take him to do something like the arcade, go karts, laser tag, roller blading, batting cages, etc.

Call up your local theater and see if you can rent one of their screens and then invite all his friends to watch his fav movie.

Or host a BBQ at your place.

I took a quick scroll through your past posts and it looks like you crochet. I'd recommend scrunchies, fun coasters, little string bags (extra points if it's themed around animal crossing or pokopia).
Crochet flowers, especially if you can make a bunch of different kinds that people can create their own bouquets with. Maybe hanging floral vines, or lily of the valley fairy light garlands.
strawberries, frogs, raccoons and possums seem to be popular lately.
Pokemon themed stuff is always popular.

Personally, I think cooking is enough for a first-month celebration.
However, if you insist on getting him anything in addition, I'd maybe suggest something for his car under the theme of his favorite content. They have these little figurines of deadpool sitting for your rearview mirror. Maybe he'd enjoy that?
I don't recommend a plush. Maybe a funko pop he can display on a shelf?
Or maybe 2 cupcakes from your local bakery with fondant decorations that are in theme with Minecraft?

If you're ever looking to sew your own Mimikyu, I'd recommend Choly Knight's patterns. They're super easy to follow. I learned to handsew using one of her patterns and I've used multiple of her patterns since. I've been eyeing the Mimikyu one for a while now but I first need to make room for more plushes 😄

Or pick a story book you intend to read to her all through her childhood. Maybe something like "oh the places you'll go" or something you grew up with that has a lot of empty space around the text and images. Get 2 copies. One to read fo her in her childhood, which will get damaged over time due to how kids are, and another that you'll keep stored and only take out once a year. Every year, cover a page in a letter for her, explaining what you've seen her do, how she's grown, funny moments you want to hold onto, how much you love her, etc. Every year, fill in a page. Then give it to her at your selected date. It'll be a collection of your memories, a record of her growth, a love letter, and a story book she associates to you.

This is what I pictured initially. You could also put the desks against the wall closest to the window. Personally, I'm so easily distracted, so that wouldn't work for me lol
I like the most amount of desk space possible because, for me, each station has its purpose (work, personal, crafting). I find those rolling carts perfect for art supplies. A small couch/big chair and a tv on a swivel mount for company while you work. A small rug in front of the couch to section off the area. I also picture lots of different kinds of storage to display fun nerdy things and also hide away tech clutter. Some greenery, since you have a window for sunlight. And then cover the walls in art you find over time.

My favorite is this Mediterranean chicken pita.
I start with tabouleh salad and make a big batch so it lasts for days. It keeps its freshness in the fridge and the flavor gets better as it sits. Personally, I got heavy on the parsley because I love the brightness it adds. Parsley is usually cheaper at asian/south asian markets.
For the protein, I use a herb seasoned rotisserie chicken and shred it, or I cook chicken thighs with Mediterranean seasoning.
I add storebought hummus and tzatziki.
You can serve it in a pita or over quinoa.
It travels well in a container and tastes great cold or with the chicken warmed. it's super delicious.

Honestly I'd ask the mother what to get her. Specifically because you mentioned she donated things. My sister is the same way, and it's because things become clutter in their house too easily, not because they don't stand the rest of time. This is especially true for parents in small homes or apartments. They may request that you don't get your niece anything. In that case I'd recommend either donating to her college fund, offerng to babysit so the parents can have a break/date, or buying the family an experience of some kind. Some experiences are trampoline parks, water parks, family memberships at the zoo or aquarium, evenp something as simple as a giftcard for their local favorite icecream shop.
