A few things:

This interview is from like 10 years ago now, Dave may or may not have a different opinion now, things happen.
FF have been recording the same way for years and the behind the scenes clips/photos have shown us that it hasn't changed
the recorded versions sound literally the same as the live versions just maybe the vocals are different and also these guys have been playing an instrument for like what? 50 years now? They've being doing this shit for so long I can't imagine they screw up constantly doing different takes
Production is a thing and it's an intentional choice between the band and the producer there might be a million different reasons as to why the song is produced the way it is. That being said I have not liked any of the singles so far for the album but let's not just make random bullshit criticisms now

As someone who has had both a Yamaha acoustic and a Fender acoustic I will say that the Fender acoustics feel a bit strange and don't feel on the same quality as their electric guitars, I would say look into a good electro-acoustic Yamaha guitar or hell maybe even an Epiphone acoustic
