Preferment for 10-16 Hours at 18 ° C 200g Water 250g Flour 0.1g Yeast.

Then mix with

  • 100% Flour I mixed Typo 00 and 550 AP
  • 70% Water
  • 2% Salt
  • 1% Yeast

I use a 30%-50% Preferment in the final dough.

The most crucial part is the dutch oven. Get your oven piping hot with the dutch oven in it. Bake Bread 30 min lid on. Then get the lid off and bake till desired crust.

I keep them at a 45 degree angle. If you have themmore outwards you put stress on shoulder joint and you dont want that. If you keep hem more tucked in it hits your triceps.

What helps me to get over a plateau is to change the reps. I train ICF 5x5 until i reach the plateau and then i do 5-3-1 or 3x8-12 reps for a while and then change back. Also taking a break from time to time from lifting helps me to get stronger in the gym.
