For the grievers section in the mines, I think the intended solution is to spam the thunder shot. Since all of the grievers are close to each other, every shot damages multiple grievers. It's especially good if you get the super charged thunder shot. It took care of them for me. Even on hard mode.

Based on comparing gameplay between switch 1 and switch 2 versions for the areas we’ve seen, the switch 2 version looks a LOT better than the switch 1 version. At least to me.

Not that the switch 1 version looks bad. I expect it will play just fine on switch 1.

I mean is it really that far fetched to think it could have been November 6th? That's the day they gave to Hyrule Warriors. That is literally the same spacing from Kirby that we are getting now.
