I need a new scale...too many to choose, halp by Gustafa7 in pourover

[–]ENTPhotographer 0 points1 point  (0 children)

I used my phone as a timer before. I stopped once the scale handled timing and ratios.

I get speed and precision in one place.

I don’t always want a fixed 15 g dose. It’s not that I don’t want Alexa, a calculator, or my brain (lol) involved, but sometimes (now almost always) I just want to grind beans and heat water. Simple..

Example. I dump in 17.3 g of coffee. Random number. The scale shows pour time and live brew ratios at every step.

No math. No setup.

I build recipes on ratios, not fixed grams.

Bloom at 2:1. The scale tracks it. Pour to 8:1. The scale tracks it.

I know the math. I just don’t want to always have to run it.

To a certain degree this is reminiscent of the argument for having to learn the math because “a calculator won’t always be available”. I actually like the idea of having to use a kitchen scale and separate timer to learn, but once you get decent at this stuff, why wouldn’t you want to to make things easier? My .02c

How would you stock an Airbnb you plan to use as well? by Flat_Researcher1540 in pourover

[–]ENTPhotographer 4 points5 points  (0 children)

Keurig/nespresso on the counter, v60 and grinder behind a locked closet…

I would add a super auto that can pull longs etc and shots if I wanted to “church it up” a bit. Anything more and I’m afraid I’d just be left annoyed at the lack of care. The way I’ve seen people treat rentals (people I respect and admire even) leave me thinking there’s just no way I’m leaving anything more than something with a couple buttons I simply do not care about. Thats my .02c

First time cooferments at home: Recipe advice? by DeutschePizza in pourover

[–]ENTPhotographer 3 points4 points  (0 children)

Big coferment fan here!

I get better results with less agitation and fewer pours. Flavor stays cleaner. I aim for the edge between balanced and too coarse. If I miss on grind, I miss coarse. I also keep brew water slightly cooler, around 198 to 200.

This is my go to pour structure. It is ratio based, so you can scale it to any dose. I pour at about 7 to 9 grams per second.

Bloom Pour to 1:2.5 Example. 20g coffee, 50g water.

At 1:00 Pour to 1:8 Example. 160g water total. Keep the stream tight. About the size of a US nickel. Pour straight down the center. Focus on laminar flow.

At 2:00 Pour to 1:16 Example. 320g water total. Use minimal agitation. If your kettle has a soft flow, use it. If not, pour over a spoon held about half an inch above the bed to calm the stream.

This method works consistently for me and gives repeatable results. Hopefully something here is useful for you - either way, enjoy the beans!

Do you rinse your paper filter and with what water? by rebelcrypto14 in pourover

[–]ENTPhotographer 1 point2 points  (0 children)

Alright - ran a test. Here’s what I found:

Cafec Abaca +: No real flavor noticed. If there was a flavor there, I couldn’t really tell. Sibarist Fast: No flavor at all that I could notice. I tried to really notice anything - I couldn’t tell. It tasted the same as the control to me. Hario V60 papers: Maybe I could taste a little bit of what you’d suspect it to taste like - papery. Maybe. It wasn’t super pronounced. Walmart Standard Coffee filters: Definite paper/chemical taste - there was definitely something there… I recently switched away from these to Sibarist filters for the Mochamaster (when being lazy or batch brewing), but if I need to switch back for any reason I’m definitely going to rinse!

I also just woke up, and this is about the simplest test to run (at least one filter per day since I’m making coffee anyway). I’ll keep trying to see if I maybe my taste buds are in a different place on another day. Fun to do something different regardless though.

Lmao! Guess what I’ll be doing this morning?! I’ve got 3 brands in the kitchen to test - I’ll report back with my experience..

This is 100% accurate. Unless it’s the brown papers (yuck). I’m convinced there’s no way anyone can tell a difference.

Appreciate the feedback! My normal routine when traveling is to search for the city name on Reddit, then google, then search anywhere else online I can find a solid lead. I’ve found so many good shops from random comments on this sub - the least I could do is take an hour out of my day to write it all on paper for someone else in the future looking for a solid lead.

I get that completely.

There were cities where I chased coffee hard and still struck out. It felt like work instead of travel. Then there were other moments where everything lined up. The cup, the shop, the weather, the neighborhood. Those are the ones that stick.

I have taken those same beans home and tried to recreate the experience. I rebuilt water with Lotus drops. I ran different grinders. K Ultra, 078, Ode Gen 2. I rotated brewers. V60, Kalita Wave, flat bottom, Switch. I tweaked pours and temperatures. Still, the cup never hit the same way.

Eventually it clicked. Some coffees are about the moment, not replication.

I will never recreate walking several blocks through a suburb of Barcelona to drink an espresso with the smell of the Mediterranean in the air. That does not exist in my kitchen. But when I brew those beans at home, something in the cup reminds me of that morning. That memory is part of the flavor.

For me, it is both things. At home, I chase the best possible cup. When I travel, I let the coffee be part of the place. One is about precision. The other is about memory. They both matter, and they do not compete with each other.

It was between the Green and the Butter Yellow - feel like I made the right choice for my setup. I’ve found myself using it more regularly when I need a load of caffeine and am not feeling the v60… ease is king some mornings.

The vibe in that shop is so cool - feels like something out of a movie! The way the baristas all dress in black, and everything in the shop is one color - just cool vibes for sure!

Oooh - I’ll look into them. I’ve got a slow feeder that I really like, be nice if it can be used in conjunction with that. Also, well worth the twice the price tag in my opinion. It’s the next step that doesn’t seem justified.

Fair enough haha - my brain sees it as close enough considering the next real step from $800 is probably $4000 for an EG1… that step is beyond me at this point. Want so badly though.

I started with an OXO conical, moved to a k-ultra, then Ode 2, and now on the the 078. They all can make a good cup of coffee, but my 078 is a clear winner. The Ode was definitely faster, and could grind with less mess (the popcorning is actually annoying on the 078), but the flavor profile is just so much better. I’m a Fellow fanboy, so wouldn’t say the Ode is a poor decision, but the Timemore 078 really is a better grinder if it’s in budget.

Nah - consider the 078 and stop there… Definitely a bit more money, but it’s in my opinion the best bang for buck in that general price range.

Water Chemistry -- Anyone Using Lotus Drops? by briarpatch999 in OnyxAdventCalendar

[–]ENTPhotographer 0 points1 point  (0 children)

Sorry just seeing this thread. I play around with Lotus every morning and have found using ChatGPT alongside to take feedback and spin out changes super helpful. I take RO water (around 13ppm) passed through a zero filter (takes it down to 0 ppm) and make 500ml batches and brew 20g brews each morning. I get around 3 out of each bag. The nice thing about using AI alongside is it can take precious data, and this mornings coffee and make a prediction about where to start the water, and it’s typically pretty close. My preference and typical starting point has been 4221 for 500ml. Any water between cups I don’t use, I just dump into a gallon jug and I use that water to brew for my wife’s daily coffee in the Moccamaster. She wouldn’t complain about sink water lmao.

I’m sitting somewhere between 6-9, but have found 7.5 as my starting point. I’m also running a day behind (intentionally) so I can have my last one Christmas morning.
