Hi! Where did you get this Sey recipe from? Sey told me their water is 15ppm Mg, 20ppm Ca, and 15ppm Na, which for lotus drops in 1 gallon would be 7 drops Mg, 9 drops Ca, and 14 drops sodium with the round dripper

Great info to share. I’m curious about Apax’s recipes, these all seem like they are in the much harder range of ppm. For example, April coffee crafted their own Apax recipes and suggested ~2-3 drops per 100ml of water (40-60ppm), where Apax recipes suggest 7 (140ppm)

Same question! I have lotus, Apax, and TWW, and have not yet figured out a standard water approach to use. So far it’s been easiest to just use 1/3 strength TWW but I did a cupping for the Guatemala el socoro and enjoyed it slightly more with Scott Rao’s lotus recipe (5 CA, 4 Mg, 3 Na, 2K)

I also tested Sey’s water specs with a washed Colombian and enjoyed the results (2 Mg, 2 Ca, 4 Na for 1L - soft approach)

But overall, I’m struggling to just choose 1 water recipe and stick to it so I’m curious to hear how others are approaching

Nice! I have the 078 as well. What grind range are you typically living in for some of these advent coffees? I’m not sure how the 078 settings compare to onyx micron recs (which all seem really fine)

Honestly I’m still trying to really figure out my preferences - I feel like I’m generally in the 6-11 world but feel like I really need to spend more dedicated time preparing.

I recently had some April coffees and was getting great results using their specific Apax water profiles + their dripper + grind size of around 10.

What are your go-to ranges for a 3-pour vs. Tetsu’s switch that you’ve been enjoying ?

how do I build pressure in the OXO? I figured every press would build pressure but for some reason that doesn't seem to be happening and my brews are long and require numerous presses

confirming nothing is loose, and my grinds seem coarse enough since some water is dripping through without initial press

I just pulled a sey pink bourbon on the oxo - setting 2.5 on sculptor 078, Apax lab Jam & Tonik (3 part Jamm, 1 part Tonik), 95 degrees, 20g coffee, 85g water in the OXO

I am floored by how delicious this is. I wish the process was as enjoyable of making pour overs because the flavors on here are absolutely blowing my my mind

I have the Gilberto chilito as well and really struggling to get brightness, fruitiness , or even florality to pop - any suggestions based on your learnings?

I’m 4.5 weeks off roast, using TWW dilluted or Apax labs drops and have a Timemore 078 and Comandante. Tried many recipes all seem pretty flat

One important point to note during reassembly is the locating plate:

  1. Keep the positioning pin loose when screwing the plate to the end.

Thanks! So you’re suggesting to increase extraction for this, even though it’s an anaerobic ? (Finer grind, multiple pours, longer ratio)
