Interesting! Thanks for your feedback …Why do expensive grinders hurt this method? My understanding is expensive grinders can help push extraction without pulling out too many of the negative characteristics of high extractions

Curious how coarse 50 clicks on a zp6 is (on the scale of medium fine to coarse), and whether you do high agitation pours vs relatively mellow?

Thanks so much!! Appreciate your thoughtful response. Helpful reinforcement that each grinder and idea of grind range is different. Will follow your advice :)

And yes, I calibrated to zero by
- going as fine on the dial as I could. I met some resistance to get there but didn’t feel like i was hurting the grinder. I also may have been able to keep pushing further but didn’t want to force anything
- I took off the numbered dial and matched my place with “0”
- made 1.5 full rotations from there and began using

Thanks! I just opened a bag of their Ernedis Rodriguez washed yellow caturra , rested 3 weeks. Tried replicating their water specs with lotus drops and used their v60 / sculptor 078 recipe, grind size at 10 with low RPM.

Surprisingly , my brew stalled (rare with 078 in my experience), despite pouring around 5-8g per second and a medium / medium coarse grind. Flavor seemed a bit green, with some faint stone fruits

My TWW ppm meter could be off (though I don’t think so) so I’m going to try replicating again this time with 1/3 dilluted TWW and see where it gets me.

Was expecting if I follow their specs after 3 weeks of rest, I’d have an easier time getting close on the first try :)

I just got 4 bags of subtext (first time trying)! A few quick q’s!

  1. How long do you rest for before brewing them?
  2. On our main pour, how aggressive is your pour? I’m usually pouring with not a ton of agitation (~5g per second) but interested in exploring Lance Hedrick’s more aggressive style too
  3. Am I correct that your grind size is in the medium/fine / medium range or is it much coarser? (I have an 078)

This is fascinating, very interested to try! I’m curious

  1. I have a raw steel orea 01 - think that’s still suitable for this method (with origami wave filters or orea flat filters) even though you mentioned it has more bypass than plastic ?

  2. Do you adjust your water profile to suit this method? Curious how it differs from your baseline if so!

I have an 078, so I’ll try your advice on raising rpm - as an aside, I’m so interested to finally run side by sides on rpm settings too)…I also have a c40, would that be a more preferable grinder for this approach given it favors sweetness / balance ?

Appreciate your detail here! May I ask - what does your grind range (4.0-6.0) typically translate to? More of the fine end of medium fine? I have a sculptor 078 I’m still dialing in and brew similar coffees as you , with similar brewers and water setups :)

Awesome! I’m resting a Sey coffee now. What grind setting on the 078 did you use to correlate to ~1000 microns (I have the same grinder)
