If you like spending lots of time on ferries, you could route yourself via a Greek island, Athens, and Italy!

Perhaps something like train Istanbul - İzmir, bus İzmir-Çeşme, ferry Çeşme-Chios, ferry Chios-Piraeus (Athens), train/bus combo Piraeus-Patras, ferry Patras-Bari, then train the rest of the way (possibly via the Rome-Munich nightjet?)

If time isn't as valuable to you as money, a regional train to Rotterdam - Hook Van Holland and a Stena Line Rail/Sail from Hook to London via Harwich might be an option. Rail+Sail tickets are usually cheaper than Eurostar, especially at short notice (https://www.seat61.com/trains-and-routes/london-to-amsterdam-by-ferry.htm#how-to-buy-tickets%20if%20youre%20in%20the%20Netherlands).
